Alaska Smoked Salmon Deli Sandwich

    Ingredients

    Cream Cheese Schmear:

    • 8 oz. cream cheese, at room temperature
    • 3 oz. capers
    • 2 oz. lemon juice
    • 2 oz. horseradish, prepared
    • ¾ cup dill, chopped
    • Sea salt to taste
    • White pepper to taste

    Pickled Red Onions:

    • 12 oz. white vinegar
    • 3 oz. sugar
    • 1 tsp. salt
    • 1 ea. bay leaf
    • 5 ea. allspice berries
    • 5 ea. whole cloves
    • 1 tsp. red pepper flakes
    • 16 oz. red onion, thinly sliced

    Preparation:

    • Deli roll, 12 ea.
    • 36 slices heirloom tomato, sliced
    • 1 cup arugula
    • 3-4 lbs. Alaska smoked salmon, cut in finger slices 4-5 oz. ea.
    • Dill, sprigs to garnish
    1. Cream Cheese Schmear: Combine all ingredients and mix well. Add salt and pepper to taste. Refrigerate.
    2. Pickled Red Onions: Combine vinegar, sugar, salt and spices. Bring to boil, reduce heat, add onions; simmer for 1 minute. Cool in bowl, then refrigerate.
    3. Assembly: Spread cream cheese schmear on bottom of toasted roll; layer with tomatoes, arugula and smoked salmon. Garnish with pickled onions and fresh dill.
