RECIPE: Herb-Crusted Sablefish w/ Olive-Lemon Swiss Chard

    Ingredients:
    •  1 lemon
    • 2 tsp coriander seeds
    • 2 tsp cumin seeds
    • 2 tsp sea salt
    • 2 tsp black peppercorns
    • 4 tbsp olive oil
    • 2 portions sablefish
    • 2 cloves garlic, peeled & crushed
    • Pinch red pepper flakes
    • 2 lg bunches Swiss chard ( 1 1/2 lbs.). Remove stems and tear leaves.
    • 2 tbsp oil-cured black olives, pitted & chopped
    Directions:
    1. Put the lemon in a small saucepan and add water to barely cover it. You can put a water-filled bowl on top to keep the lemons underwater. Bring to a boil then reduce and simmer until the lemon is soft when stabbed with a fork (about 30 mins.). Remove lemon from the water and cut in half to cool.
    2. Remove the pulp from the lemon with a spoon and push it through a sieve. Retain the portion squeezed out the bottom of the sieve. Finely chop the peel and add to pulp.
    3. Roast the coriander and cumin seeds in a cast iron pan over medium-high heat and stir continually. When seeds are dark and small wonderful, remove from pan. About 10-20 seconds. Place the roasted seeds with the salt and pepper corns in a mortar and pestle and grind. Sprinkle the mixture on both sides of the sablefish.
    4. Place half the olive oil (2 tbsp) in a large cast iron pan over med-high heat. When hot, place the sablefish portions in the pan skin side up and cook for 2-4 minutes. Flip the portions and cook 4-7 minutes or until fish is just cooked.
    5. Place 2 tbsp olive oil in another large cast iron pan over med-high heat. Add garlic and red pepper. Cook and stir until garlic is gone, about 30 seconds. Add the Swiss chard, stir as it cooks, allow to wilt. Cover and stir from time to time until done, about 5 mins.
    6. Toss olives and lemon mix into Swiss chard and add salt and pepper to taste.

    Thaw in fridge overnight, cut out of package, rinse under cold water, pat dry.
