Wonderful Salmon Meal Tonight

  • Nicole and I just finished dinner and I wanted to share some details on how I prepared it. Those of you who have talked to me recently might have noticed that I am on a butter kick. That is, I am in love with cooking red/sockeye salmon in just a little butter. On our recipes page you will find two butter salmon recipes but what I did tonight was a slight variation and we both really liked it. Follow the Salmon Roasted in Butter recipe but try the following for a little something extra:

    • Salt & Pepper Instead of seasoning the salmon with salt and pepper from a shaker, try grinding your own pepper corns and corse salt. Try corse Himalayan pink salt ground just a little. For the pepper corns, place a cast iron pan on the stove over medium/high heat and add 20 or so pepper corns. Let them cook until they are glossy on the outside and start to pop. Some wonderful smelling smoke will rise from the pan. This process toasts the pepper corns and releases the yummy oils inside. Rub the salt and pepper on the salmon before putting it in the pan with melted butter.
    • Onions Another tip is add purple onions and fresh tomato wedges to the butter around the salmon. The tomatoes cook just a little and the onions caramelize and taste wonderful!

    For an 8oz. portion I used 1/4 stick butter, 1/4 onion and 1/2 tomato. This recipe tastes absolutely incredible. Give it a try and let me know what you think. Again, the recipe can be found here.
