Minmum 1.5 lb Top Sirloin Steak. A cut typical from the back portion of the cow where steaks can have more muscle than fat. This particular steak is great marinated for 12 hours in a marinade that would break down the muscular straitions through out the steak. Then either cooked low and slow or high heat and quickly with a nice medium rare center. Very underestimated delicious piece of meat!
